With February upon us, it’s time to assess progress against resolutions. Monthly, we will update our MealSolutions® page with a selection of recipes to provide fun ideas to help with those resolutions while answering the age-old question of “What’s for dinner?” Our goal is to provide quick, great tasting, “good for you” recipe ideas. AllspiceSeasoning Spotlight — Allspice

Our spotlight this month is on allspice, a single spice that imparts the aroma and flavor of a trio of warm seasonings — cinnamon, cloves and nutmeg.

Background
Allspice is the unripened berry of a small evergreen reaching 25 to 40 feet high. A long-term investment for spice growers, the tree begins to bear fruit in its seventh or eighth year and produces full crops only after 15 years of growth. It flowers in June, July, and August, and the berry, which is about the size of a black currant, is picked while still green. During the drying process, the fruit changes to a reddish-brown.

Uses
Allspice has a variety of uses, including recipes for desserts and preserves as well as gravies and marinades. You can use ground allspice in cakes and pies, breads, chutneys, custards, marmalades, sauces, soups, and ketchup. Sprinkle some on oatmeal for a fun breakfast pick me up!

History
Spanish explorers discovered allspice soon after Columbus found the islands of the West Indies. They named it "pimienta" (Spanish for pepper), because it resembled the peppercorn in size, shape, and flavor. In the seventeenth century, when it became clear that the two spices were unrelated, the name allspice came into use. Allspice was one of the exotic spices that commanded high prices and promised fame and fortune to the explorers who might deliver pungent, aromatic spices to European nobility.

Next month we’ll learn about turmeric, whose warm aroma, bright color, and gingery/peppery taste are relied upon in cooking throughout Asia. It's best known as the spice that gives curry powder its distinctive color.

Recipe of the Month - Tummy-Warming Buttermilk Gingerbread

Simple and sweet, your family and/or guests will love the seasonal spices (including allspice) and the comfort of a belly-warming dessert.

Tummy-Warming Buttermilk GingerbreadIngredients
1 1/4 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/8 teaspoon sea salt
1/2 cup molasses
1/3 cup sugar
1 stick unsalted cultured butter, melted
1/2 cup cultured low-fat buttermilk, chilled and well shaken
1 extra large egg

Directions
Preheat oven to 325 degrees. Lightly grease a 9x9x2-inch metal baking pan.

Sift the flour, cinnamon, ginger, allspice, nutmeg, baking soda, and sea salt into a medium-sized mixing bowl.

In a large mixing bowl, whisk together molasses, sugar, melted butter, buttermilk and egg. Fold in the dry ingredients. Pour gingerbread batter into the prepared baking pan.

Place pan on the middle rack of the preheated oven. Bake gingerbread for 25 to 30 minutes, or until an inserted tester comes out clean. Allow cake to cool completely in the pan, placed on a cooling rack.

Once cooled, cut into 9 squares.

Nutrition Facts
As prepared, each serving contains 250 calories, 11g total fat, 50mg cholesterol, 220mg sodium, 35g total carbohydrate and 3g protein.

Simply Organic 1% Fund

Grant Helps Native Allspice Farmers in Guatemala

A grant from the Simply Organic 1% Fund provided a small group of Cacualzul family farmers in Guatemala with organic allspice seedlings. The farmers, who previously worked with only wild allspice trees, welcomed the easier management and better yields of the new trees. The grant also funded training in organic management, quality testing, recordkeeping, a technical consultant, and financial assistance with organic certification costs. Read more.
