Double-Duty Dressings

Our dressing mixes will add pizzazz to your greens — if you haven’t tried them yet, you'll be surprised at the flavor they pack! You can store them conveniently in your pantry until they're needed. Flavors range from vinaigrettes to classic Caesar to ranch — a tasty array of choices for all every green salad. The dressings are versatile enough to be used as marinades as well — and we’ve got a number of other ideas for using our dressing mixes in dishes besides salads. Try these recipes to turn our dressing mixes into sometime unexpected and delicious.

Let’s start with our vinaigrettes. Vinaigrettes are traditionally made by slowly adding 3 parts oil at room temperature to 1 part vinegar, using a whisk, until it emulsifies into a smooth sauce. In addition to adding flavor to these dressings, try giving the mixes some other flavoring seasoning tasks.

Our Garlic Vinaigrette lends its classic flavor and convenience to such fare as appetizers, pate and Baba Ganoush:

cherry tomatoesMarinated Mushrooms

Ingredients
1 pound cleaned mushrooms
1 package Simply Organic Garlic Vinaigrette Dressing Mix
1/3 cup olive oil
4 tablespoons red wine vinegar

Directions
Slice mushrooms to desired size or leave whole (de-stem if desired). In a shallow re-sealable container, combine Garlic Vinaigrette Dressing Mix, oil and vinegar. Toss with mushrooms. Seal or cover and refrigerate for at least 2 hours (overnight if time permits). Sauté in medium skillet just before serving.

Two dependable, likeable flavors are brought together in Apple Basil Vinaigrette for a mellow flavor interplay that brings out the best in salads and marinades — and works well in a couple of unexpected dishes, as well:

Fruit Chutney

Ingredients
1 cup peeled and diced mixed fruit
1 package Simply Organic Apple Basil Vinaigrette Dressing Mix
1 tablespoon red wine vinegar

Directions
In a medium bowl, mash fruit (or use a food processor). Add Apple Basil Dressing Mix and vinegar, and mix. Chill and serve as a relish.

Italian Egg Bake

Ingredients
8 eggs
1/2 cup milk
1 package Simply Organic Italian Dressing Mix
1 cup shredded mozzarella cheese
1/2 cup diced vegetables (tomatoes and mushrooms)

Directions
Preheat oven to 350 degrees. In a large bowl, beat eggs. Add milk and Italian Dressing Mix and whisk well. Add cheese and vegetables. Pour into greased 9-inch pie pan. Bake 40 to 50 minutes, or until center is firm.

Ranch dressing is an all-American classic — created by a California dude ranch owner living in Alaska. It’s so versatile it can be used as a dressing, a dip, a condiment — or as an ingredient in breads:

Corn Bread

cherry tomatoesIngredients
2 cups cornmeal
1/3 cup flour or 1 extra package of Simply Organic Ranch Dressing Mix
1 teaspoon baking soda
1 tablespoon sea salt
1 package Simply Organic Ranch Dressing Mix
1 egg
1 1/2 cups milk

Directions
Preheat oven to 400 degrees. Grease 8-inch round cake pan (or similar-sized baking pan). Mix dry ingredients in large bowl. In a small bowl, beat egg and milk together. Add milk/egg mixture to dry ingredients. Spread into baking pan. Bake 15 to 20 minutes, until golden.

Classic Caesar is a dressing that has stood the test of time — and our convenient mix offers the full, fresh flavor of this venerable dressing at its best. Try it in this equally classic bruschetta:

Caesar Polenta Bruschetta

walnutsIngredients
1 1/2 cups water
1 package Simply Organic Classic Caesar Dressing Mix
1 cup cornmeal
1 cup diced tomatoes
1/2 cup shredded Parmesan cheese

Directions
In a medium saucepan, whisk together water and Caesar Dressing Mix. Bring to a boil, then stir in cornmeal. Reduce heat and cook on low for 5 minutes, stirring. Spread in well-greased, 2-quart casserole pan. Cover and chill until ready to heat and serve. When ready, cut chilled polenta into squares and leave in casserole pan. Broil polenta on high 10 to 15 minutes, until a golden crisp develops on top. Top each square with a scoop of tomatoes and shredded Parmesan. Broil 5 more minutes.
