  1. Preheat oven to 350 degrees.
  2. Pat dry chicken with paper towels and spray or spread skin with a light coating of oil, if desired. (This will help seasoning adhere to chicken, and can help seal in juices and make for crispier skin).
  3. Evenly coat entire chicken with seasoning.
  4. Place on a sheet tray or shallow roasting pan and cook for 90 minutes. Check for doneness: in the meatiest part of the thigh, chicken juices should run clear and temperature should reach 165 degrees.
  5. Cook for 20-30 minutes more if needed, checking again after 10 minutes, until internal temperature reaches 165 degrees.
 
RECIPE TIPS
  1. The size of your chicken will determine your cooking time. A heavier bird will take longer!
  2. Place whole rosemary and thyme in the cavity of the bird to increase the herb flavors.
