Vanilla Bourbon Glazed Salmon

A simple, sweet-savory glaze gets extra depth of flavor from pure Madagascar vanilla extract, for a succulent bourbon salmon thatā€™s rich and not too sweet.

  1. Place a small saucepan over medium heat and add bourbon, brown sugar, butter, red pepper flakes and soy sauce. Bring to a boil, then reduce heat slightly and simmer for about 5 minutes, until glaze starts to thicken. Remove from heat and stir in vanilla extract.
  2. Season each salmon fillet with salt to taste.
  3. Heat a nonstick skillet over medium-high heat.
  4. Add oil to heated skillet. Place fillets in skillet skin side up and sear until golden brown, then carefully flip over. Brush salmon with glaze. After a minute or two, brush again. Repeat until all glaze is used and salmon is cooked through to 145 degrees.
  5. Serve warm with thinly sliced green onion.
