Ingredients

  • 2 tablespoons avocado oil
  • 1 cup diced yellow onion
  • 3 large cloves garlic, minced
  • 2 large bell peppers, diced (about 3 cups)
  • 1 pound lean ground beef
  • 1 can (14 ounces) diced tomatoes
  • 2/3 cup uncooked instant rice
  • 2/3 cup water
  • 2 tablespoons finely chopped parsley, plus more for garnish
  • 1 packet Simply Organic® Southwest Taco Seasoning Mix
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 400 degrees.
  2. In a large oven-safe skillet, add oil and place over medium heat.
  3. When oil is heated, add onion, garlic and bell peppers and cook, stirring occasionally, for 5 to 6 minutes until they begin to soften.
  4. Add ground beef and cook, stirring frequently, until no longer pink.
  5. Stir in tomatoes, rice, water, parsley and Southwest Taco Seasoning Mix. Cook for about 5 minutes, stirring occasionally, until rice starts to soften.
  6. Top with shredded cheese and place in oven for 10 to 12 minutes until cheese is melted.
