Ingredients
- 2 tablespoons avocado oil
- 1 cup diced yellow onion
- 3 large cloves garlic, minced
- 2 large bell peppers, diced (about 3 cups)
- 1 pound lean ground beef
- 1 can (14 ounces) diced tomatoes
- 2/3 cup uncooked instant rice
- 2/3 cup water
- 2 tablespoons finely chopped parsley, plus more for garnish
- 1 packet Simply Organic® Southwest Taco Seasoning Mix
- 1 cup shredded cheddar cheese
Directions
- Preheat oven to 400 degrees.
- In a large oven-safe skillet, add oil and place over medium heat.
- When oil is heated, add onion, garlic and bell peppers and cook, stirring occasionally, for 5 to 6 minutes until they begin to soften.
- Add ground beef and cook, stirring frequently, until no longer pink.
- Stir in tomatoes, rice, water, parsley and Southwest Taco Seasoning Mix. Cook for about 5 minutes, stirring occasionally, until rice starts to soften.
- Top with shredded cheese and place in oven for 10 to 12 minutes until cheese is melted.
