Crunchy on the outside and soft on the inside, these Sweet Potato Fries are made even better with a creamy avocado-cilantro dipping sauce that’s super simple to make, and seasoned with our Fajita Seasoning Mix. They’re the perfect easy snack or side dish!

Ingredients

  • For the Sweet Potato Fries:
  • 2 large sweet potatoes, peeled and cut into ¼-inch thick fries
  • 2 tablespoons olive oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sea or Himalayan pink salt
  • 1 tablespoon Simply Organic® Fajita Seasoning Mix
  • For the Avocado Dipping Sauce:
  • 1 ripe avocado
  • 1/4 cup Greek yogurt, sour cream, or non-dairy alternative
  • 2 tablespoons lime juice
  • 1 teaspoon Simply Organic® Fajita Seasoning Mix
  • 1/2 teaspoon sea or Himalayan pink salt
  • 2 tablespoons fresh cilantro
  • 2-4 tablespoons water

Directions

  1. Preheat oven to 400 degrees. In a large bowl, toss sweet potato fries with olive oil, cornstarch, and Fajita Seasoning Mix.
  2. Spread fries out in a single layer on a baking sheet.
  3. Bake for 20 to 25 minutes, flipping halfway through, until browned and crispy on the edges, and fork tender inside.
  4. While sweet potatoes are cooking, in a blender or food processor, combine avocado, Greek yogurt, lime juice, Fajita Seasoning Mix, salt and cilantro. Blend until smooth, adding water as needed for a creamy consistency.
  5. Transfer fries to a serving plate and serve with the avocado dipping sauce on the side.
