This slow cooker chili only takes about 10 minutes of hands-on work! Throw everything into your slow cooker, head to work, and come home to a delicious, creamy chili with shredded chicken, white beans and green chilies. We make the seasoning simple with Simply OrganicĀ® Mild Taco Seasoning Mix.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast
  • 1 packet Simply OrganicĀ® Mild Taco Seasoning Mix
  • 1 can (4 ounces) diced green chilies
  • 1 yellow onion, diced
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 1/2 cups frozen corn
  • 2 cups chicken broth
  • Juice from 1 lime
  • 4 ounces cream cheese
  • 1/4 cup heavy cream

Directions

  1. Into a slow cooker, add the chicken breasts, seasoning mix, chilies, onion, beans, corn, chicken broth and lime juice, and gently stir. Cook on high for 4 to 6 hours or low for 6 to 8 hours.
  2. Remove chicken from cooker and shred with two forks.
  3. Add cream cheese and heavy cream into cooker and stir for 1 to 2 minutes until creamy and fully incorporated.
  4. Add shredded chicken back into cooker. Stir well to heat chicken through, and serve hot with toppings of your choice. We suggest avocado, sour cream and fresh cilantro.
