Fajitas, oven quesadilla style! Made in one big sheet pan for the whole family with chicken, peppers, onion, and cheese. So much quicker than making individual quesadillas, and you can even slice them into smaller servings for a fun entertaining appetizer. Ingredients

  • 2 tablespoons olive oil
  • 1/2 yellow onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 2 tablespoons water
  • 1 package Simply Organic® Fajita Seasoning Mix
  • 8 (8-inch) flour tortillas
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: sour cream, sliced avocado, tomatoes, jalapeño, cilantro

Directions

  1. Preheat oven to 400 degrees. Grease a large sheet pan with cooking oil or nonstick cooking spray.
  2. In a large skillet, heat olive oil, add onions and peppers, and sauté for about 5 to 7 minutes until crisp-tender. Remove from pan with tongs or slotted spoon and set aside.
  3. Add chicken and sauté for about 5 to 7 minutes, until browned on both sides and cooked through.
  4. Return cooked onions and peppers to skillet, add water and fajita seasoning mix, and stir well. Cook for about 3 minutes, until everything is well coated and the sauce thickens.
  5. Lay 6 tortillas on sheet pan, making sure they overlap but have edges hanging over sides of pan.
  6. Spoon fajita mixture evenly over tortillas and top with an even layer of cheese.
  7. Place 2 remaining tortillas, overlapping, over mixture, then fold bottom tortilla edges over to encase filling completely.
  8. Spray top of tortillas with cooking spray or brush with oil, and set another sheet pan on top. Bake for 10 minutes. Remove top sheet pan and bake for 10 to 12 more minutes, until crispy and golden brown.
  9. Remove from oven and let sheet pan cool for a few minutes, then carefully, using oven mitts, place a large cutting board on top and flip sheet pan over. Slice quesadilla into rectangles.
  10. Serve plain or with your favorite toppings, and enjoy!
