Roasted Tomato Onion and Pepper Salsa

Ingredients
8  plum or Roma tomatoes, halved
1  medium white onion, quartered
1/2  medium green bell pepper
2 tablespoons olive oil
3/4 teaspoon Frontier Kosher Salt
1/4 teaspoon Frontier Organic Black Pepper
1 package Simply Organic Salsa Mix
3  cloves fresh garlic, peeled
1  medium jalapeno, quartered (stem, seeds and ribs removed)
Directions
1. Preheat your oven to 375 degrees.
2. Place the tomatoes, onion and green pepper on a rimmed sheet pan. Drizzle with olive oil, toss to coat and season with salt and black pepper. Roast in preheated oven for 30 to 40 minutes or until vegetables are soft and slightly caramelized.
3. In the bowl of a food processor, add the roasted vegetables, garlic, jalapeno and Simply Organic Salsa Mix. Pulse until combined but still a bit chunky.
4. Refrigerate until ready to serve.
