Tostada -- Spanish for "toasted" -- is a flat or bowl-shaped tortilla that's toasted or deep fried. It was born of the need to prolong the use of a tortilla that was going stale but was still fresh enough to eat. Not wanting to waste old tortillas, people spread beans, rice, meat, cheese and vegetables onto the tortillas like an "open-faced" taco.
