Morning Mole Tostada
Lightly fried tortilla topped with fried egg, mole sauce, tomatoes and diced green chilies.
1/4 cup canola oil
6 (6-inch) flour tortillas
1 tablespoon unsalted butter
1 package Simply Organic Mole Sauce Mix
3/4 cup warm water
1 1/2 cups diced tomatoes
1 can (4 ounces) diced green chilies
For each tortilla: Fry in canola oil over medium heat one minute per side. Set aside on a plate.
For each egg: Melt butter in a skillet over medium heat and crack an egg directly into the skillet. Fry until browned (approximately 4 to 5 minutes) and carefully flip. Fry on second side until lightly browned.
For mole sauce: Whisk Simply Organic Mole Sauce Mix with warm water.
To assemble: Place an egg on each tortilla. Top with 3 tablespoons mole sauce, 1/8 cup tomatoes, and 1 tablespoon green chilies.
Top with cilantro, sour cream, and hot sauce.
