Ingredients
- For the Shrimp & Veggies:
- 1 packet Simply OrganicĀ® Mediterranean Lemon Sheet Pan Seasoning Mix
- 1 pound raw shrimp
- 3-4 cups vegetables (we suggest 1 cup sliced red onion, 2 1/2 cups fresh green beans, 2 Tbsp. capers, 1/2 cup mixed olives, halved)
- 2 tablespoons olive oil
- For the Lemon-Herb Yogurt Sauce:
- 1/2 cup plain yogurt or non-dairy alternative
- 1/2 teaspoon honey
Directions
- Preheat oven to 400Ā°.
- Reserve 2 tsp. Mediterranean Lemon Seasoning from packet for the sauce.
- In a bowl, toss shrimp and veggies with oil and seasoning.
- Bake on sheet pan for 8 to 12 minutes, until shrimp is cooked through.
- While shrimp is cooking, make sauce and refrigerate until ready to serve.
- Mix reserved Mediterranean Lemon Seasoning with plain yogurt or alternative, and honey.
- Drizzle sauce over meal.
