

Lemon Garlic Shrimp with Orzo

Ingredients
- 1 pound raw shrimp, peeled and deveined
- Sea or Himalayan pink salt, to taste
- Simply Organic® Black Pepper, to taste
- 1 tablespoon olive oil
- 1 cup dry orzo pasta
- 1 teaspoon Simply Organic® Garlic Powder
- 1/2 teaspoon Simply Organic® Onion Powder
- 1/4 teaspoon Simply Organic® Crushed Red Pepper
- 3 cups vegetable broth
- 1/2 cup frozen peas
- 1 tablespoon Simply Organic® Parsley
- 2 tablespoons lemon juice
Directions
- Pat shrimp dry using a paper towel, and season both sides with salt and pepper to taste.
- In a large skillet, heat olive oil over medium-high heat. Sauté shrimp for about 2 minutes per side, until cooked through. Remove shrimp from pan and set aside.
- Add orzo to skillet, then add garlic powder, onion powder, and crushed red pepper. Stir well and let pasta toast for 1 minute.
- Add vegetable broth. Bring to a simmer and cook, stirring often, for 10 to 12 minutes, until orzo is al dente and has absorbed most of the broth.
- Add peas, parsley, lemon juice, and cooked shrimp and stir well. Cook for 2 to 3 more minutes, until everything is warmed through and orzo is tender.
- Garnish with more crushed red pepper to taste, and enjoy!
