Irish Potato Stew

The secret to an especially rich and satisfying Irish stew is to build all of the ingredients including sweet fennel seed, pungent mustard powder and aromatic dill into vegetable broth from the start.

1 tablespoon vegetable oil or olive oil
2 cups finely chopped leeks, excluding dark green parts
2 cups celery stalks, chopped
1/2 cup Irish stout
3 cups Russet potatoes, peeled & chopped to 1/4 inch pieces
2 cups rutabaga, peeled & chopped to 1/4 inch pieces
1/4 teaspoon Frontier Organic Fennel Seed
1/2 teaspoon Frontier Organic Brown Mustard Seed
1 teaspoon Frontier Organic Dill Weed
6 cups water (alternate: substitute water and broth powder for 6 cups of vegetable broth)
3/4 cup low-sodium vegetable broth
1/2 cup half and half (or use unsweetend almond or soy milk for a vegan option)
2 cups packed Dino kale, stems removed, cut in thin strips
1/2 cup packed fresh basil, cut into a chiffonade, for garnish
 Frontier Sea Salt and Organic Black Pepper, to taste
1. Saute leeks, onions and celery in oil on medium-low heat until soft and clear, about 8 minutes. (If needed, add a little stout to the mixture to keep it moist.)
2. Add stout, potatoes, rutabaga, fennel seed, mustard powder, dill broth powder and water.
3. Bring to a boil, then reduce to a simmer and cook until potatoes and rutabaga are tender, about 12 minutes. Your soup mixture should be nice and thick.
4. Put about 1/2 of the soup mixture in a blender and puree with the half and half.
5. Add pureed creamy mixture back into soup.
6. Stir in kale and cook over low heat for a few minutes, until it turns bright green. Do not let half and half come to a boil.
7. Add salt and pepper to taste.
8. Garnish with basil chiffonade, if desired.
