Recipe Tip: When you’re shopping for asparagus, note that thick spears will be much easier to work with, so opt for those if possible.

Ingredients
- 3/4 teaspoon Simply Organic® Lemon Pepper
- 1 1/2 tablespoons minced shallot (from 1 small shallot)
- 2 tablespoons fresh lemon juice
- 1 1/2 tablespoons sherry vinegar
- 2 tablespoons extra virgin olive oil
- 1 pinch kosher salt
- 1/2 cup (about 1.5 ounces) packed shaved Parmesan cheese, plus more to top
- 1 pound large asparagus spears, tough bottoms removed
Directions
- Using a vegetable peeler, shave the asparagus lengthwise into thin strips and place in a medium bowl.
- Pour vinaigrette over shaved asparagus and stir to coat. Taste and season with additional salt and lemon pepper, as desired.
- Fold in Parmesan cheese.
- Serve topped with additional shaved Parmesan and a sprinkling of lemon pepper.
- In a small bowl, whisk together the shallot, lemon juice, sherry vinegar, olive oil, salt and lemon pepper. Set aside.
