Recipe Tip: When you’re shopping for asparagus, note that thick spears will be much easier to work with, so opt for those if possible.

Ingredients

  • 3/4 teaspoon Simply Organic® Lemon Pepper
  • 1 1/2 tablespoons minced shallot (from 1 small shallot)
  • 2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons sherry vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 pinch kosher salt
  • 1/2 cup (about 1.5 ounces) packed shaved Parmesan cheese, plus more to top
  • 1 pound large asparagus spears, tough bottoms removed

Directions

  1. Using a vegetable peeler, shave the asparagus lengthwise into thin strips and place in a medium bowl.
  2. Pour vinaigrette over shaved asparagus and stir to coat. Taste and season with additional salt and lemon pepper, as desired.
  3. Fold in Parmesan cheese.
  4. Serve topped with additional shaved Parmesan and a sprinkling of lemon pepper.
  5. In a small bowl, whisk together the shallot, lemon juice, sherry vinegar, olive oil, salt and lemon pepper. Set aside.
