
Cranberry Puff Pastry Cutouts

Ingredients
- For the Cranberry Filling:
- 2 cups fresh or frozen cranberries
- 1/2 cup cane sugar
- 1/4 cup orange juice
- 2 teaspoons orange zest
- 1 teaspoon Simply OrganicĀ® Pure Madagascar Vanilla Extract
- 1/2 teaspoon Simply OrganicĀ® Cinnamon
- For the Puff Pastry:
- 1 package (2 sheets/17.3 ounces) puff pastry
- 1 egg yolk
- 1 teaspoon water
- Powdered sugar, for dusting
Directions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a medium saucepan, combine cranberries, sugar, orange juice and zest, vanilla and cinnamon. Bring to a boil, then reduce the heat to low and simmer for 10 to 12 minutes, until thickened. Remove from heat and let cool completely.
- Roll out each sheet of puff pastry into about a 12-x-12-inch square. Spread cooled cranberry filling across top of one sheet of puff pastry, out to the edges. Place the other sheet of puff pastry on top.
- Cut out as many shapes as you can using cookie cutters, and transfer to a baking sheet.
- In a small bowl, whisk together egg yolk and water, then brush onto tops of cutouts lightly.
- Bake for 18 to 20 minutes, until golden brown. Let cool slightly, then dust with powdered sugar before serving.
