If you’re looking for the perfect Valentine’s Day cocktail, look no further! This martini is made with Irish cream liqueur, vodka and an easy homemade vanilla strawberry simple syrup. Decorate the glass with melted chocolate and serve with a strawberry heart and a cute bow.

Ingredients

  • For the Strawberry-Vanilla Simple Syrup:
  • 2/3 cup sliced strawberries
  • 2 tablespoons cane sugar
  • 1/4 cup water
  • 1/2 teaspoon Simply Organic® Pure Madagascar Vanilla Extract
  • For the Cocktail:
  • 2 ounces dark or semisweet chocolate
  • 4 fluid ounces Irish cream liqueur
  • 4 fluid ounces vodka
  • 2 fluid ounces Strawberry-Vanilla Simple Syrup

Directions

  1. In a small saucepan over medium heat, add strawberries, sugar and water. Bring to a boil, then reduce heat and simmer for 3 to 5 minutes, until strawberries are soft.
  2. Remove from heat and let cool, then strain berries into a bowl. Use a spatula to extract as much juice from the strawberries as possible. Whisk vanilla extract into strawberries.
  3. Place two martini glasses in the freezer for 5 minutes. Meanwhile, melt chocolate in a small saucepan over low heat. Remove glasses from freezer and use a spoon to drizzle chocolate on insides of glasses. Let harden.
  4. In a cocktail shaker filled halfway with ice, add Irish cream liqueur, vodka and strawberry syrup. Shake well for 10 seconds, then strain into cocktail glasses. Garnish with a strawberry heart. Enjoy!
