Chicken and veggies cooked fajita-style in our Fajita Simmer Sauce, wrapped in flour tortillas and baked until golden brown and crisp. Topped with sour cream and cilantro, these baked chicken fajita taquitos are crispy, cheesy, and delicious.

Ingredients

  • 3 tablespoons olive or avocado oil, divided
  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 2 medium yellow onions, thinly sliced
  • 2 medium bell peppers (any color), thinly sliced
  • 1 pouch Simply OrganicĀ® Fajita Simmer Sauce
  • 1½ cups shredded Mexican cheese blend
  • 10 small flour tortillas
  • Cooking spray or oil
  • Optional garnishes: sour cream, avocado, radishes, jalapeƱo, salsa, cilantro

Directions

  1. Preheat oven to 400 degrees. Lightly grease a 9-x-13-inch baking dish.
  2. In a large skillet over medium heat, add 1 tablespoon oil and the chicken. Cook for 5 to 7 minutes, until lightly browned and cooked through. Remove chicken from skillet and set aside.
  3. Add remaining 2 tablespoons oil to skillet over medium heat, then add sliced onion and bell pepper. Cook for about 5 to 7 minutes, until onions are softened and peppers are slightly charred.
  4. Return cooked chicken to skillet, then add Fajita Simmer Sauce and stir until well combined.
  5. Lay a tortilla flat on a cutting board and add some chicken/vegetable mixture and a sprinkle of cheese. Tightly roll up tortilla and place it with seam down in greased baking dish. Repeat with remaining tortillas and filling.
  6. Spray taquitos with cooking spray or brush lightly with oil, and bake for 15 to 20 minutes, until golden brown and crispy.
  7. Serve topped with desired garnishes.
