

Cheesy Chipotle Bacon Mini Burgers

You simply canāt beat the flavor of these sliders! Mini chipotle-spiced burger patties are topped with melty cheese and served on a slider bun with crispy bacon, shredded lettuce or slaw, and the easiest 4-ingredient garlic-chipotle aioli.

Ingredients
- For the Burgers:
- 8 slices bacon
- 1 1/2 pounds ground beef
- 1 1/2 teaspoons Simply OrganicĀ® Chipotle Powder
- Sea or Himalayan pink salt, to taste
- 8 slices cheddar or pepper jack cheese
- 8 mini burger buns or slider buns
- For the Chipotle Aioli:
- 1/3 cup mayonnaise
- 1 teaspoon lime juice
- 1 teaspoon Simply OrganicĀ® Chipotle Powder
- 1/2 teaspoon Simply OrganicĀ® Garlic Powder
- Sea or Himalayan pink salt, to taste (optional)
- Shredded lettuce or slaw (optional)
Directions
- In a skillet over medium heat, cook bacon until crisp. Transfer to a paper-towel-lined plate. Once cooled, break each slice of bacon in half to fit the slider buns.
- In a mixing bowl, combine ground beef with 1½ teaspoons chipotle powder and salt to taste. Gently mix, then divide and form into eight 3-ounce patties.
- Grill or pan-sear patties over medium-high heat for 2 to 3 minutes per side, or until cooked to your liking. Add cheese slices during the last minute and cover skillet with lid to melt.
- Optional: Lightly toast buns on grill or in a dry skillet until golden brown.
- Make the Chipotle Aioli: In a small bowl, add mayonnaise, lime juice, remaining 1 teaspoon chipotle powder, garlic powder and a pinch of salt, whisking to combine.
- Spread aioli on bottom buns, add lettuce or slaw (if using), a burger patty and a half-slice of bacon, then add top buns.
