You simply can’t beat the flavor of these sliders! Mini chipotle-spiced burger patties are topped with melty cheese and served on a slider bun with crispy bacon, shredded lettuce or slaw, and the easiest 4-ingredient garlic-chipotle aioli.

  1. In a skillet over medium heat, cook bacon until crisp. Transfer to a paper-towel-lined plate. Once cooled, break each slice of bacon in half to fit the slider buns.
  2. In a mixing bowl, combine ground beef with 1½ teaspoons chipotle powder and salt to taste. Gently mix, then divide and form into eight 3-ounce patties.
  3. Grill or pan-sear patties over medium-high heat for 2 to 3 minutes per side, or until cooked to your liking. Add cheese slices during the last minute and cover skillet with lid to melt.
  4. Optional: Lightly toast buns on grill or in a dry skillet until golden brown.
  5. Make the Chipotle Aioli: In a small bowl, add mayonnaise, lime juice, remaining 1 teaspoon chipotle powder, garlic powder and a pinch of salt, whisking to combine.
  6. Spread aioli on bottom buns, add lettuce or slaw (if using), a burger patty and a half-slice of bacon, then add top buns.
