

Carrot Ribbon Salad with Feta Cheese

Fresh, crisp carrot ribbons are tossed in a bright, herb-forward vinaigrette dressing made with lemon juice, olive oil, honey, and Simply Organic® Dill and Parsley. The salad is finished with crumbled feta for the perfect balance of light, refreshing, salty, and slightly sweet flavors. This makes for a great spring side dish paired with grilled chicken or salmon, or you can even add it to a grain bowl or a wrap for a bit of crunch in place of slaw.

Ingredients
- 5 large carrots, washed and peeled
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 1/2 teaspoons Simply Organic® Dill Weed
- 1 1/2 teaspoons Simply Organic® Parsley
- 1 teaspoon sea or Himalayan pink salt
- 2 ounces crumbled feta cheese
Directions
- Using a vegetable peeler or mandolin, shave carrots into long strips. If using a vegetable peeler, it’s helpful to stick a fork in the thicker end of the carrot to help keep it stable.
- In a small bowl, whisk together lemon juice, olive oil, honey, apple cider vinegar, dill, parsley, and salt.
- In a large salad bowl, toss carrot ribbons with dressing, then top salad with crumbled feta cheese. This salad is best enjoyed fresh.
