Ingredients
- 1 can unsweetened coconut milk
- 1 packet Simply Organic® Korma South Indian Style Seasoning Mix
- 1/2 teaspoon cornstarch
- 1 cup frozen green beans
- 1/2 cup frozen pea and carrot blend
- 1 can garbanzo beans, drained
Directions
- In a medium saucepan over medium-low heat, whisk together coconut milk, seasoning mix, and cornstarch, and heat to a simmer.
- Add vegetables and chickpeas and return to a simmer for about 5 minutes, stirring occasionally, until vegetables are tender.
- Enjoy over rice.
