Directions

  1. Preheat oven to 500 degrees. Brush a large baking sheet with olive oil and sprinkle with a thin layer of cornmeal to prevent sticking.
  2. In a small saucepan over medium low heat, add butter, hot sauce, garlic powder, onion powder, and black pepper. Cook, stirring occasionally, until butter is completely melted and all ingredients are well incorporated.
  3. In a bowl, place shredded chicken. Pour 1/3 of sauce over chicken and toss to coat.
  4. On a lightly floured surface, use your fingertips to shape pizza dough into a disk, turning and pressing to form a rim around the edge. Place dough over both hands with palms up and stretch dough, rotate, then stretch again until dough is about ¼-inch thick. Transfer to cornmeal-coated baking sheet.
  5. Spread a thin layer of buffalo sauce on top of pizza dough, reserving about 1 to 2 tablespoons for finishing. Sprinkle mozzarella over sauce, then arrange chicken evenly over cheese. Top with red onion slices.
  6. Bake pizza for about 15 to 20 minutes, until crust is golden brown and cheese is melted and bubbling. Drizzle with reserved buffalo sauce and garnish with green onions.
