Ingredients
- 1 tablespoon olive or avocado oil
- 1/2 yellow onion, diced
- 1 can (15 ounces) black beans, drained but not rinsed
- 1 teaspoon Simply Organic® Ancho Chili Powder
- 1/2 teaspoon Simply Organic® Garlic Powder
- 1/2 teaspoon Simply Organic® Cumin
- 6 large eggs
- Sea salt, to taste
- Simply Organic® Black Pepper, to taste
- 9 soft corn tortillas or 6 flour tortillas, warmed
- Optional, for serving: salsa, avocado, cotija cheese, chopped cilantro
Directions
- In a medium skillet, heat oil over medium heat. Add onion and sauté for 3 to 4 minutes, until softened.
- Add black beans, ancho chili powder, garlic powder and cumin, and stir well. Continue cooking for 3 to 4 minutes, until beans are warmed through.
- In a medium bowl, whisk eggs with salt and pepper. Place a skillet over low heat, add eggs and heat until cooked through, periodically pushing eggs toward center from sides of pan as they cook.
- Assemble tacos with black beans, scrambled eggs and toppings of choice.
