

Adobo Grilled Shrimp Linguine

This spicy adobo shrimp linguine comes together in just about 30 minutes for a quick and comforting weeknight dinner that’s packed with flavor, or an elegant dinner in with friends. The grilled shrimp is also delicious on its own, or try it on a salad for another easy meal.

Ingredients
- 1 pound large raw shrimp, peeled and deveined
- 3 tablespoons olive oil, divided
- 1 tablespoon Simply Organic® Adobo Seasoning
- 12 ounces linguine
- 3 garlic cloves, thinly sliced
- 1/2 teaspoon Simply Organic® Crushed Red Pepper Flakes
- 1/2 teaspoon Simply Organic® Black Pepper
- Sea or Himalayan pink salt, to taste
- 3/4 cup finely grated Parmesan cheese
- Finely chopped parsley, for garnish (optional)
Directions
- Preheat a grill or grill pan over medium-high heat.
- Pat shrimp dry with paper towel. In a bowl, toss together shrimp, 1 tablespoon olive oil and adobo seasoning until well coated. Thread shrimp onto skewers. Grill for 2 to 3 minutes per side, until cooked through and lightly charred.
- Cook linguine in salted water according to package directions. Reserve 1/2 cup of the pasta water, then drain linguini.
- Heat remaining 2 tablespoons olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook, stirring, for 1 minute, until fragrant.
- Into skillet, add drained pasta, reserved pasta water, grated Parmesan, pepper and salt to taste. Toss to coat pasta, then add grilled shrimp just before serving. Garnish with more red pepper flakes, parmesan and fresh parsley, if desired.
