Perfect as appetizers, snacks or light meals, these festive stuffed potatoes are a fun way to eat your vegetables. Packed with cheese, Frontier vegetarian Bac'Uns and Simply Organic Italian Dressing Mix, these potato skins are topped to perfection with sour cream, green onions or chives.


  • 1 package

    SO Italian salad dressing
  • 1/4 cup

    Frontier Bac'Uns Vegetarian Bits 2.47 oz.

  • 4 baking potatoes

  • 1 1/2 cups shredded cheddar cheese

  • 1 teaspoon softened butter


    1. Preheat oven to 400 degrees.

    2. Scrub potatoes. Prick with a fork, place on cookie sheet, and bake 60 minutes, until done. Meanwhile, mix cheese, butter, Bac-Uns®, and Italian Dressing Mix together in a bowl. Set aside.

    3. When potatoes are done and cooled just enough to handle, slice in half lengthwise. Carefully scoop out the potato meat, leaving a quarter inch along the edge of the skin. Lay potato halves skin-side down on cookie sheet. Scoop cheese mixture into each one. Return to oven and broil 5 to 10 minutes until cheese is bubbly.

    Serve with sour cream.
