SO Vanilla Beans -

SO Vanilla Extract 2oz. -
1 teaspoon
SO Vietnamese Cinnamon -
1/2 teaspoon
SO Ginger ground organic -
1 1/4 cups whole wheat pastry flour

1/2 tablespoon baking powder

1 pinch salt

1 cup milk

3/4 cup + 1 tablespoon organic white sugar

6 tablespoons butter, melted

2 cups blackberries (fresh or frozen)

2 packed cups peach slices (fresh or frozen)
Directions
1. Preheat oven to 350 degrees.
2. In a large bowl, gently combine the blackberries, peach slices, white sugar, cinnamon and ginger. Set aside.
3. In a separate large bowl, whisk together the flour, baking powder and salt.
4. In a small bowl, whisk together the milk, melted butter, sugar and vanilla extract. Slice vanilla beans lengthwise and scrape out inner pulp and seeds. Add pulp and seeds to milk mixture and whisk in.
5. Pour wet ingredients into dry ingredients and whisk together until combined.
6. Pour dough into a greased 13 x 9-inch baking dish.
7. Pour fruit filling (and juices from the filling) over dough.
8. Bake for 50 to 60 minutes, until sides begin to brown (not burn!). Allow cobbler to cool for 10 minutes before serving.
Serve with homemade whipped cream and/or vanilla ice cream. Garnish with fresh mint leaves.
