- 2 pounds sweet potatoes
- 2 teaspoons olive oil
Wash sweet potatoes and pierce with a fork. Microwave for 1 minute 30 seconds, flip, and microwave for another 1 minute 30 seconds.
When potatoes are cool enough to handle, peel and cut into fries. Toss with olive oil and seasoning. Spread in a single layer on a baking sheet. Bake at 375 degrees for about 25 minutes or until crisp and golden.
