Ingredients

1 box (16 ounces) rotini noodles
1 cup mayonnaise
½ cup nonfat Greek yogurt
1 tablespoon Louisiana hot sauce or preferred hot sauce
1 tablespoon fresh lemon juice
¼ cup fresh parsley, chopped, or 2 tablespoons Simply Organic® Parsley
¼ cup green onion, chopped
1 packet Simply Organic® Cajun Dry Rub
1½ cups red bell pepper, julienned
1 cup celery, chopped
1 cup carrot, shredded
¼ cup red onion, sliced
Directions
- Cook noodles as directed on the box. Drain, let cool and refrigerate in a 6-quart bowl until ready to assemble pasta salad.
- In a separate bowl, combine mayonnaise, yogurt, hot sauce, lemon juice, parsley, green onion and Cajun Dry Rub.
- Remove chilled pasta from refrigerator and add red bell pepper, carrot, celery and red onion, stirring gently to combine. Add Cajun mayonnaise mixture and stir until well coated.
- Chill for a minimum of 30 minutes before serving.
CHEF TIPS:
Add cooked and chilled shrimp or chicken to salad for extra protein.
For even fresher taste when using Simply Organic Parsley, soak the leaves in a little ice water for 5 to 10 minutes, then drain, before using.
