Rice Pudding with Vanilla Bean Paste

This simple but elegant vanilla rice pudding needs nothing but the fresh vanilla-bean flavor easily created with Simply Organic Vanilla Bean Paste. Delicious straight from the pot, you can also dress this pudding up with toasted coconut, a sprinkle of cardamom, or a swirl of fruit compote, if you like.
Ingredients

2 cups water
3 tablespoons cane sugar
1/3 cup short-grain rice
1 can (15 fluid ounces) coconut milk
Directions
- In a 1- or 2-quart saucepan, stir together water and sugar. Bring to a boil over medium-high heat.
- Add rice and reduce heat to a very gentle simmer (low to medium-low heat). Cook for 15 minutes, stirring occasionally to prevent sticking.
- Stir in coconut milk and simmer another 15 to 20 minutes, until mixture thickens enough to coat the back of a wooden spoon.
- Stir in vanilla bean paste. Cover and allow to cool slightly. Serve warm or chilled.
