Rice Pudding with Vanilla Bean Paste

This simple but elegant vanilla rice pudding needs nothing but the fresh vanilla-bean flavor easily created with Simply Organic Vanilla Bean Paste. Delicious straight from the pot, you can also dress this pudding up with toasted coconut, a sprinkle of cardamom, or a swirl of fruit compote, if you like.

Ingredients

  • 2 cups water

    3 tablespoons cane sugar

    1/3 cup short-grain rice

    1 can (15 fluid ounces) coconut milk

    2 teaspoon Simply Organic Vanilla Bean Paste

Directions

    1. In a 1- or 2-quart saucepan, stir together water and sugar. Bring to a boil over medium-high heat.
    2. Add rice and reduce heat to a very gentle simmer (low to medium-low heat). Cook for 15 minutes, stirring occasionally to prevent sticking.
    3. Stir in coconut milk and simmer another 15 to 20 minutes, until mixture thickens enough to coat the back of a wooden spoon.
    4. Stir in vanilla bean paste. Cover and allow to cool slightly. Serve warm or chilled.
