Green Chili with Chicken

Generously spiced with earthy cumin, fragrant coriander and a mixture of herbs, this green chili recipe makes a quick, warming meal.


  • 1 tablespoon olive oil

    1 green bell pepper, diced

    1 small onion, diced

    1 teaspoon Simply Organic Cumin

    1 teaspoon Simply Organic Coriander

    1 teaspoon Simply Organic Parsley

    1 teaspoon Simply Organic Oregano

    1 teaspoon Simply Organic Cilantro

    1 teaspoon Simply Organic Garlic Powder

    1 1/2 pounds chicken breast, cooked and shredded

    1 can (4.5 ounces) green chilies

    1 jar (16 ounces) green tomatillo salsa

    1 1/2 cups chicken stock

    1 can (15 ounces) cannellini beans

    Juice of 1 lime

    Sliced avocado, for garnish (optional)

    Shredded cheese, for garnish (optional)

    Fresh cilantro, for garnish (optional)

    Sliced green onion, for garnish (optional)

    Sour cream, for garnish (optional)


    1. In a large pot over medium-high heat, heat olive oil. Add bell pepper and onion and sauté, stirring frequently, for 5 minutes.

    2. In a small bowl, combine cumin, coriander, parsley, oregano, cilantro and garlic powder. Stir until well combined, then add to peppers and onions. Stir until peppers and onions are evenly coated.

    3. Add chicken, green chilies, tomatillo salsa, chicken stock and cannellini beans. Reduce heat and simmer for about 15 minutes.

    4. Add lime juice and serve with avocado, shredded cheese, cilantro, green onion and/or sour cream, if desired.

    Recipe Tip: 

    For a vegetarian version, simply leave out the chicken, double the cannellini beans and use vegetable stock instead of chicken stock.
