Shaved Asparagus Salad with Lemon Pepper

Ingredients

3/4 teaspoon
SO Lemon Pepper organic -
1 1/2 tablespoons minced shallot (from 1 small shallot)

2 tablespoons fresh lemon juice

1 1/2 tablespoons sherry vinegar

2 tablespoons extra virgin olive oil

pinch kosher salt

1 pound large asparagus spears, tough bottoms removed

1/2 cup packed shaved Parmesan cheese (about 1.5 ounces), plus more to top
Directions
1. In a small bowl, whisk together the shallot, lemon juice, sherry vinegar, olive oil, salt and lemon pepper. Set aside.
2. Using a vegetable peeler, shave the asparagus lengthwise into thin strips and place in a medium bowl.
3. Pour vinaigrette over shaved asparagus and stir to coat. Taste and season with additional salt and lemon pepper, as desired.
4. Fold in Parmesan cheese.
5. Serve topped with additional shaved Parmesan and a sprinkling of lemon pepper.
