2 tablespoons oil
1 medium onion, diced
8 ounces (about 1 ½ cups) package sliced mushrooms
2 cups grated zucchini (about 4 small)
1 package Classic Fajita Simmer Sauce
4 10-inch flour tortillas
1. Heat 2 tbsp oil in large skillet over medium heat.
2. Add onions and mushrooms and cook until slightly golden, about 3 minutes.
3. Add zucchini and sauté another 2 minutes. Pour sauce over cooked veggies and mix until coated.
4. Simmer for 4 minutes.
5. Serve in warm tortillas.
