Zucchini and Mushroom Fajitas

Whip up homemade zucchini and mushroom fajitas in minutes. Our Classic Fajita Simmer Sauce gives the veggies a pleasant, smoky heat.


  • 2 tablespoons oil

  • 1 medium onion, diced

  • 8 ounces (about 1 ½ cups) package sliced mushrooms

  • 2 cups grated zucchini (about 4 small)

  • 1 package Classic Fajita Simmer Sauce

  • 4 10-inch flour tortillas


    1. Heat 2 tbsp oil in large skillet over medium heat.

    2. Add onions and mushrooms and cook until slightly golden, about 3 minutes.

    3. Add zucchini and sauté another 2 minutes. Pour sauce over cooked veggies and mix until coated.

    4. Simmer for 4 minutes.

    5. Serve in warm tortillas.

    If desired, serve with salsa, sour cream, avocado, cilantro, lime and prepared Simply Organic Guacamole Mix Sauce -- regular or spicy, your choice!
