Ingredients

Southwest Taco Simmer Sauce -
1 pinch
SO Smoked Paprika Org -
2 cups chopped jackfruit, either fresh or canned

1 tablespoon oil
-
1 yellow onion, thinly sliced

4 cloves garlic, minced

8 corn tortillas

1/2 avocado
-
1/2 small red onion, thinly sliced

2 tablespoons chopped cilantro

1 lime, wedge
Directions
1. Heat the oil in a large skillet over medium-high heat. When hot, add in the onions and garlic and sauté for about 5 minutes until the onions have softened and are beginning to brown.
2. Add the chopped jackfruit and simmer sauce and stir. Cover the pan, reduce heat and let it simmer until the jackfruit softens a bit, about 5 minutes.
3. Now take a potato masher and smash all the jackfruit up to get that shredded texture. If you find it a bit wet, just cook a little longer. If you find it a little dry, just add a splash of water.
4. Warm tortillas in foil. Add a scoop of the jackfruit and top with avocado, red onion, cilantro and a squeeze of lime. For additional spice, add a pinch of smoked paprika or a splash of hot sauce.
