1/4 cup extra virgin olive oil

1 lemon, juiced

1/2 teaspoon salt

1 head cauliflower, cut into large florets

1 yellow bell pepper, cut into squares

1 red onion, cut into wedges

6 skewers

Spinach, for serving

Grilled naan, for serving
Directions
1. In a large bowl, whisk together olive oil, lemon juice, curry powder, ginger, garlic and salt. Add cauliflower florets and toss until they are well covered.
2. Heat the grill.
3. Thread cauliflower florets, yellow bell pepper and red onion onto skewers. Grill skewers for 6 to 7 minutes on each side.
4. Serve with spinach and grilled naan.
