Blackberry Ginger Peach Cobbler

Peaches and blackberries are spiced with organic cinnamon and ginger, then baked with a vanilla bean pastry dough for an easy summer fruit cobbler.

1. Filling In a large bowl, gently combine the blackberries, peach slices, white sugar, cinnamon and ginger. Set aside.

2. Dough In a large bowl, whisk together the flour, baking powder and salt. In a separate small bowl, whisk together the milk, melted butter, sugar, vanilla bean seeds and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk together until combined.

3. Pour the dough into a greased 13x9 baking dish.

4. Pour the filling (and juices from the filling) over the dough.

5. Bake for 1 hour, until the sides begin to brown (not burn!). Allow the cobbler to cool for 10 minutes before serving.

Serve with homemade whipped cream and/or vanilla ice cream. Garnish with fresh mint leaves.
