Vegan Turmeric Tofu Scramble with Nutritional Yeast

This vegan tofu scramble bursts with flavor and color, thanks to red peppers and bright green kale seasoned with earthy garlic, paprika, turmeric and nutritional yeast.

1. Pat tofu dry and drain moisture by pressing tofu under a heavy plate or skillet for 10 to 15 minutes.

2. While tofu drains, prepare sauce whisk together tamari, water, olive oil, garlic powder, paprika, turmeric and nutritional yeast until well blended.

3. In a large skillet over medium heat, add the 1 tablespoon olive oil. Sauté peppers and onions until translucent.

4. Add tofu and sauce and sauté until well mixed and tofu is a bright yellow color.

5. Add kale and sauté until bright green.

6. Serve immediately.
