Classic Eggs Benedict

4 tablespoons unsalted butter
1 cup low-fat milk
1 package Simply Organic Hollandaise Sauce Mix
3  toasted and split English muffins
6  eggs, poached
6 slices ham
1. In a medium saucepan, melt butter on low heat. Whisk in milk, then Simply Organic Hollandaise Sauce Mix. Bring to boil, whisking constantly. Boil until desired thickness is reached.
2. Plate English muffin halves, top each with a slice of ham and a poached egg, and top with 2 1/2 tablespoons sauce.
