Sweet Potato Herb Biscuits

These deliciously savory biscuits will perk up any meal. Serve with a main dish or as a complement to a salad.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
4 tablespoons chilled unsalted butter, cut into ½-inch pieces
1 cup mashed sweet potatoes
1 tablespoon cider vinegar
1 package Simply Organic Mediterranean Herb Dip Mix
1. Preheat oven to 425 degrees. Lightly grease baking sheet. Set aside.
2. Cut together flour, baking powder, and chilled butter.
3. Put mashed sweet potatoes in a large bowl. Add vinegar, Dip Mix, and flour mixture. Knead together until evenly incorporated.
4. Pat dough into a circle, about 1/4-inch thick. Using 2¼-inch biscuit cutter dipped in flour, cut out biscuits. Pat remaining dough into 1/4-inch thick circle, and cut out remaining biscuits. Put biscuits on prepared baking sheet.
5. Bake for about 20 minutes or until tops of biscuits are golden brown.
