Sugar and spice and everything nice -- including pecans, pumpkin puree and maple syrup -- is what this yummy bread is made of! Our quick bread will quickly become a holiday tradition as it encompasses all the warmth, scents and goodness of the season.
1 cup pure maple syrup
2 Organic Valley Eggs
1 1/4 cups pumpkin puree
1 teaspoon Simply Organic Vanilla Extract
1 1/2 cups whole wheat pastry flour
1 teaspoon baking powder
1 tablespoon Simply Organic Pumpkin Pie Spice
1 teaspoon Simply Organic Cinnamon
1/4 teaspoon sea salt
1/2 cup chopped pecans
In a large bowl cream the butter, maple syrup, eggs, pumpkin, and vanilla.
In a separate bowl, with a wire whisk, mix together the flour, baking powder, pumpkin pie spice, cinnamon, and salt. Stir in the pecans into the dry mixture.
Fold the wet ingredients into the dry, until just fully incorporated. Do not over mix. Spoon into the loaf pan. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
