Banana Muffins
Ingredients
1 package Simply Organic Banana Bread Mix
2 large eggs, slightly beaten
1/2 cup water
1/2 cup mashed ripe banana (approximately 2 medium)

Directions
Preheat oven to 350 degrees.
Grease or line 12 muffin cups.
Put Banana Bread Mix in a mixing bowl. Add eggs, water, and mashed banana. Stir just until evenly moist.
Fill each muffin cup about 2/3 full. Bake for about 20 minutes, or until center tests done with a toothpick.
Cool for 5 minutes, then remove from pan and finish cooling on rack.
