Zucchini Onion Cake
This savory cake makes a great appetizer or side dish.
Ingredients
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 package Simply Organic Italian Herb Spaghetti Sauce Mix
1 cup water
1/4 cup butter, melted
2 eggs
1 onion, finely diced
1 zucchini, sliced

Directions
Preheat oven to 300 degrees.
In a mixing bowl combine flour, baking powder, salt and Spaghetti Sauce Mix. Mix in water, butter and eggs. Fold in onion.
Spread into greased 8 X 8-inch baking pan. Layer top of dough with sliced zucchini.
Bake for 30 to 40 minutes or until center of cake is done.
