Mexican Manicotti

Ingredients
1 package (8-ounces) manicotti noodles
2  egg whites
16 ounces cottage cheese or 16 ounces ricotta cheese
8 ounces softened low-fat cream cheese
1/2 cup shredded Parmesan cheese
1 package Simply Organic Guacamole Dip Mix
1  jar marinara sauce or 1  can diced tomatoes
Directions
1. Preheat oven to 350 degrees.
2. Cook manicotti noodles as directed until nearly soft. Drain with cold water and set aside.
3. In a large mixing bowl, beat egg whites. Blend in all ingredients except marinara sauce. Fill noodles with mixture and place in lightly greased 3-quart casserole dish.
4. Pour marinara sauce on top of stuffed manicotti. Bake 25 to 30 minutes.

Serve with a tossed Caesar side salad.

Add cooked sausage or hamburger to filling for a meat version.

If using diced tomatoes, sprinkle another package of Guacamole Mix on top of the tomatoes.
