Vegan Cupcakes
Ingredients
1 package Simply Organic Cocoa Cayenne Cupcake Mix
powdered egg replacer equivalent to two eggs
1/2 cup water
1 tablespoon soy butter

Directions
Preheat oven to 350 degrees. Grease 12-count cupcake pan or use paper inserts.
In a large bowl, combine Cupcake Mix, egg replacer, water and butter. Stir until just moist.
Pour into cupcake pan. Bake for 25 to 30 minutes, until center tests done with a toothpick or knife.
