In Italian, the word "biscotti" is the plural form of "biscotto", referring to any type of biscuit (cookie). It originates from the medieval Latin word biscoctus, meaning "twice-cooked/baked". Originally, the biscuits were baked twice in the oven so they could be stored for long periods of time, which was of particular use during journeys and wars. It is purported that a commander of the Roman Army boasted biscotti would be edible for centuries.

Mint Cocoa Biscotti
Mint Cocoa Biscotti

Ingredients
1 package Simply Organic Cocoa Biscotti Mix
2  eggs, slightly beaten
2 to 3 teaspoons peppermint flavor
Directions
Preheat oven to 300 degrees.

Empty contents of package into mixing bowl. Add eggs and Simply Organic Peppermint Flavor. Mix well.

Knead mixture as you would bread; add 1 to 2 tablespoons water if needed to bind dough. Dough shouldn’t stick to the working surface or your hands.

Roll kneaded dough into a log approximately 3 inches wide and 6 inches long. Place on lightly greased cookie sheet and bake 30 minutes.

Let cool to touch and then slice like bread (3/4-inch thick). Separate slices on cookie sheet, place on side and bake for 10 more minutes per side or until desired texture is reached. (Biscotti are typically very hard cookies.)
Chef Suggestions
After Biscotti is cooled, drizzle with melted almond bark and sprinkle with crushed peppermint candies. The candy pieces will set in the almond bark as it cools.
