Breakfast Potatoes
1 pound diced, unpeeled red potatoes
1 cup diced yellow bell pepper (about 1 large)
1 cup
sliced shiitake mushrooms 3 tablespoons water
1 tablespoon
Simply Organic Grind to a Salt Seasoning, coarsely ground
Preheat oven to 400°.
In a 2-quart casserole dish toss together potatoes, peppers and mushrooms. Whisk water and seasoning in a small bowl and pour over potato mix.
Bake 30 to 40 minutes until potatoes are tender.
Top each serving with an additional twist or two of finely ground Grind to a Salt Seasoning.
This side dish can be made the night before and reheated before serving.
