Taco Soup
Here's a hearty soup that the whole family will love. Serve with a selection of your family's favorite taco toppings and let everyone garnish their own!
1 tablespoon extra virgin olive oil
1/3 cup finely chopped bell pepper
3/4 cup finely chopped onion
1 pound ground turkey
1 package
Southwest Taco Seasoning Mix 1 box (26 ounces) chopped tomatoes**
1 cup frozen corn
3 cups chicken broth or broth made with
chicken flavored broth powder 2 cans (15 ounces each) black beans (BPA-free if possible)
sea salt to taste
Add first three ingredients to stockpot and cook over medium heat until tender. Remove from pot and set aside.
Add ground turkey to stockpot and cook to brown meat. Stir in Seasoning Mix and onion mixture. Add remaining ingredients to stockpot. Simmer 30 to 40 minutes.
Taste and add sea salt if needed.
** Most brands of canned tomatoes use BPA-based linings in the cans. BPA is a chemical that acts as a hormone disruptor and may increase the risk of certain diseases and neurological disorders. We suggest boxes/cartons of tomatoes or seeking out BPA-free brands in cans or glass containers. And, of course, you could always use fresh chopped tomatoes instead!
For thinner soup, add more broth or water to your desired thickness.
Serve soup warm with your favorite taco toppings, such as grated cheese, guacamole or avocado slices, chopped cilantro, and sour cream or Greek-style yogurt.
Add a dash of cayenne or diced chilies if your family prefers spicier foods.
Replace black beans with pinto or another variety.
Soak and cook dry beans rather than using canned.
Use ground beef or buffalo instead of turkey.
You could easily make this a vegetarian dish by omitting turkey and using vegetable broth—consider extra beans!
