Balti Curry Potato Salad
2 pounds potatoes, cooked, peeled and diced
2 hard-boiled eggs, diced
1/4 cup finely diced red onion
1/4 cup sweet pickle relish
3/4 cup mayo
2 teaspoons
Frontier Balti Curry Seasoning 1/4 teaspoon
fine sea salt 1/4 teaspoon
black pepper coarse grind
In a large mixing bowl, place potatoes, eggs, onion, and pickle relish.
In a small bowl, mix mayo, Curry Seasoning, salt, and pepper until fully combined. Add to the large bowl and carefully fold mayo mixture into potato mixture.
Once combined, top with the sliced egg, and sprinkle pepper and Curry Seasoning on top.
Chill in refrigerator for an hour before serving.
Add celery or more onion for extra flavor.
Add cooked meat for a complete meal solution.
To kick up the heat, add more Balti Seasoning.
