Golden Vanilla Fruit Cake
1 box
Simply Organic Golden Vanilla Cake Mix 2 eggs
3/4 teaspoon
vanilla extract 1 tablespoon canola or coconut oil
1/2 cup unsweetened apple sauce, natural or organic
3/4 cup kiwi, sliced
1/2 cup fresh raspberries
1 cup fresh strawberries, sliced
1/2 cup fresh blueberries
Preheat oven to 350 degrees. Spray an 8-inch cake pan with non-stick spray.
In a large mixing bowl combine Cake Mix, eggs, vanilla, oil and applesauce. Mix well.
Pour batter in pan and bake in oven for 20 to 25 minutes or until a toothpick inserted in the center of cake comes out clean.
Allow cake to cool at least one hour and then gently transfer to serving plate.
Cover top of cake with whipped cream and decorate top with fruit. (Have your kids help!)
This cake may be prepared in advance and kept in the refrigerator!
Use whatever fresh or dried fruits you have available. Frozen ones may look messy; however, you can try using them.
