There's really nothing better than raspberries paired with good-quality bittersweet chocolate. This creamy mousse cake -- adapted from a recipe by Melissa Lehmkuhl, pastry chef at ROUX -- has an ultra-decadent texture thanks to a brief baking time in a water bath and then 8 hours of chilling to allow it to set. The result is a rich, velvety confection studded with sweet-tart raspberries that melts in your mouth. Serve the cake with freshly whipped cream and more raspberries.
