Tofu Bites
Ingredients
1/2 cup low fat soy milk or 1/2 cup milk
2 tablespoons mustard
1 package Simply Organic Sloppy Joe Mix
1 pound cubed extra-firm tofu
1/2 cup bread crumbs
2 tablespoons mustard
1 package Simply Organic Sloppy Joe Mix

Directions
Preheat broiler on low and lightly grease cookie sheet.
In a medium mixing bowl, whisk milk, mustard and half the Sloppy Joe Mix. Place tofu cubes in liquid mixture.
In a shallow baking dish, blend bread crumbs and rest of Sloppy Joe Mix. Remove cubes from liquid one at a time and firmly pat breading mixture on each side.
Place on cookie sheet. Repeat with each cube. Place under broiler and cook 5 minutes. Flip cubes and broil 5 minutes more. Turn off broiler and turn on oven to 350 degrees and bake 15 minutes.
