Vegan Banana Pancakes & Waffles
1 cup
Simply Organic ® Pancake & Waffle Mix 1 medium-sized banana, mashed
1 cup soy milk
Lightly grease skillet or griddle. Preheat skillet over medium-high heat, or griddle to 350 degrees.
Combine 1 cup Pancake & Waffle Mix with banana and soy milk. Stir batter with a whisk or fork, just until moist.
PANCAKES
Pour batter onto the hot skillet or griddle using 1/4 cup measuring cup.
Flip pancakes (only once) when they’re puffed, bubbled and slightly dry around the edges. Cook the second side until it is golden brown.
WAFFLES
To make waffles, use the same recipe. Use 1/3 cup batter for each waffle. Cook in waffle iron per manufacturer's directions.
Top with fresh fruit and whipped cream for a brunch treat.
For variety, stir fresh or frozen (thawed and drained) finely chopped blueberries, apples or bananas, mini-chocolate chips,
cinnamon,
nutmeg or nuts into the batter.
